1 Large Head of Cauliflower – cleaned, chopped into bite size pieces (no stems) – around 4 cups
6 hard boiled eggs, chopped
1 cup or so mayonaise
1/3 cup or so to taste Mt. Olive (no sugar added) Sweet Relish (use slotted spoon to let relish drain)
1/2 cup or so to taste red onion minced
Salt and Pepper to taste
Cook cauliflower pieces in boiling water for 5-10 minutes, just until tender.
Drain cauliflower well – use a colander if possible – 15 min
Put cauliflower in a bowl. Add remaining ingredients except 1 egg to use later for garnish. Fold together.
Slice eggs for garnish on top and sprinkle with paprika.
Chill for at least 1 hour.
